Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Sunflower seeds - 10 g (1 tbsp)
  • Apple cider vinegar - 10 ml (2 tsp)
  • Avocado - 210 g (1.5 whole)
  • Green beans - 120 g
  • Rocket - 40 g (2 cup)
  • Low carb bread - 40 g

How to make:

  1. Steam the green beans until tender. Mash the avocado with a fork
  2. Toast the bread, then spread with the avocado, add a drizzle of olive oil and some freshly ground black pepper and salt
  3. Mix the olive oil and apple cider vinegar together and pour over the rocket leaves
  4. Sprinkle the salad and avocado toast with sunflower seeds and serve with green beans
