Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Lemon juice - 15 ml (1 tbsp)
- Parsley, chopped - 30 g (1 cup)
- Cauliflower - 300 g
- Pumpkin seeds - 20 g (2 tbsp)
- Spring onion - 30 g (3 pcs)
How to make:
- Grate the cauliflower into a bowl
- Trim and finely chop the spring onions, chop the pumpkin seeds roughly, and finely chop the parsley
- Combine all ingredients
- Mix the olive oil and lemon juice with a pinch of salt and pepper and pour over the cauliflower mixture. Stir to combine
