Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Lemon juice - 15 ml (1 tbsp)
  • Parsley, chopped - 30 g (1 cup)
  • Cauliflower - 300 g
  • Pumpkin seeds - 20 g (2 tbsp)
  • Spring onion - 30 g (3 pcs)

How to make:

  1. Grate the cauliflower into a bowl
  2. Trim and finely chop the spring onions, chop the pumpkin seeds roughly, and finely chop the parsley
  3. Combine all ingredients
  4. Mix the olive oil and lemon juice with a pinch of salt and pepper and pour over the cauliflower mixture. Stir to combine
