Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Balsamic vinegar - 10 ml (2 tsp)
  • Salt and pepper - 0.3 g (1 pinch)
  • Kalamata olive - 35 g (12 pcs)
  • Tomato, chopped - 140 g (1 cup)
  • Feta cheese - 40 g (0.3 cup)
  • Chicken breast, grilled - 145 g
  • Mixed salad leaves - 100 g (2 cup)
  • Cucumber, chopped - 135 g (1 cup)
  • Pitta bread, toasted - 70 g

How to make:

  1. Grill chicken to internal temp of 165 F, then slice into strips and set aside
  2. Mix the dressing ingredients, olive oil, balsamic vinegar, salt and pepper
  3. In bowl, place the lettuce, tomatoes, cucumbers, feta cheese, and olives. Mix together. Top with sliced chicken and drizzle over the dressing
  4. Serve with toasted pitta bread
