Ingredients:
- Olive oil - 70 ml (5 tbsp)
- Cherry tomato - 210 g (1.5 cup)
- Lemon juice - 15 ml (1 tbsp)
- Parsley, chopped - 20 g (0.5 cup)
- Cauliflower - 500 g
- Rocket - 75 g (3 cup)
- Spring onion - 30 g (3 pcs)
- Green olive, pitted - 90 g
How to make:
- Remove the florets from the cauliflower and grate them roughy into a bowl
- Cut the cherry tomatoes in half, roughly chop the rocket, parsley and spring onions and put in the bowl with the cauliflower and green olives
- Mix the olive oil, lemon juice and a pinch of salt and pepper and pour the dressing over the salad
