Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Onion - 15 g
- Tomato - 20 g
- Apple cider vinegar - 15 ml (1 tbsp)
- Avocado - 210 g (1.5 whole)
- Coriander, chopped - 5 g (1 tbsp)
- Baby spinach - 40 g (2 cup)
- Celery stick - 180 g
- Low carb bread - 40 g
How to make:
- Mash the avocado with a fork
- Finely chop the tomato, onion and coriander and mix into the avocado
- Add a little salt and pepper to taste
- Rinse and trim the celery sticks
- Place the baby spinach in a bowl
- In a separate bowl combine the olive oil and apple cider vinegar and pour this mixture over the spinach
- Serve the salad with the guacomole, celery sticks and low carb bread
