Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Cherry tomato - 75 g (0.5 cup)
- Lemon juice - 10 ml (2 tsp)
- Cucumber - 150 g
- Mint, chopped - 30 g (0.5 cup)
- Parsley, finely chopped - 60 g (1 cup)
- Hemp seeds - 60 g (0.5 cup)
- Chicken breast, grilled - 90 g (1 whole)
How to make:
- Finely chop the parsley and mint. Chop the cherry tomatoes and chop or grate the cucumber
- Combine the vegetables and herbs with the shelled hemp seeds and mix well
- Add the dressing and serve with the chicken fillet
