Ingredients:
- Olive oil - 30 ml (2 tbsp)
- Lemon juice - 30 ml (2 tbsp)
- Almond - 30 g (3 tbsp)
- Kale - 72 g
- Apple cider vinegar - 8 ml (1.5 tsp)
- Avocado - 210 g (1.5 whole)
- Hemp seeds - 30 g (3 tbsp)
How to make:
- Trim the thick stalks from the kale, roughly chop and steam it for 5 minutes
- Place the kale in a bowl to cool
- Slice the avocado and place on top of the kale
- Roughly chop the almonds
- Scatter the hemp seeds and chopped almonds over the kale
- In a separate bowl combine the dressing ingredients with a little salt and pepper
- Pour this mixture over the salad and serve
