Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Lemon juice - 15 ml (3 tsp)
- Avocado - 210 g (1.5 whole)
- Avocado oil - 5 ml (1 tsp)
- Pumpkin seeds - 12 g (1 tbsp)
- Baby spinach - 40 g (2 cup)
- Low carb bread - 40 g
How to make:
- Toast the bread
- De-seed and peel the avocado and slice
- Place the sliced avocado on the toast, drizzle with the avocado oil and lemon juice, sprinkle some black pepper and sea salt and the pumpkin seeds
- In a separate bowl mix the dressing ingredients with a little salt and pepper
- Dress the spinach leaves and serve with the avocado toast
