Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Lemon juice - 10 ml (2 tsp)
- Tofu - 325 g
- Green bell pepper - 320 g (2 whole)
- Zucchini, medium - 480 g
- Green salad - 100 g
- Vegan pesto - 35 g (2.5 tbsp)
How to make:
- Slice the zucchinis longways and brush with olive oil
- Place under the grill for 7-10 minutes
- Mix the olive oil and lemon juice
- Place the salad on the plate and pour over the dressing
- Serve with the courgettes, tofu and vegan pesto
