Ingredients:
- Olive oil - 13.5 ml (1 tbsp)
- Basil, fresh - 5 g (1 tbsp)
- Potato - 160 g (1 cup)
- Salt and pepper - 0.3 g (1 pinch)
- Salmon - 150 g
- Orange - 184 g (1 whole)
- Mixed herbs - 5 g (1 tsp)
- Broccoli - 160 g
- White wine vinegar - 8 ml (0.5 tbsp)
How to make:
- Bake salmon at 425 F for ~12 minutes or until done
- Peel and cut the potatoes into uniform pieces and boil in salted water for 15 to 20 minutes, or until cooked (timing depends on the size of the pieces)
- Cut the broccoli into florets and blanch them for 2-3 minutes in boiling salted water. Place the potatoes and broccoli on a serving plate
- Mix olive oil, vineagar, dried herbs, salt and pepper to make dressing. Pour over the broccoli and potatoes. Serve with the baked salmon
- Eat the fruit for dessert
