Ingredients:
- Olive oil - 23 ml (1.5 tbsp)
- Cherry tomato - 140 g (1 cup)
- Lemon juice - 15 ml (3 tsp)
- Salt and pepper - 0.3 g (1 pinch)
- Parsley, chopped - 10 g (1 tbsp)
- Edamame bean - 180 g
- Brown rice - 160 g
- Spring onion - 8 g
How to make:
- Cook the brown rice in two parts salted water for approximately 20-25 minutes, or until tender
- Drain the edamame beans if using canned, or thaw if using frozen. Chop the sweet peppers, slice the cherry tomatoes in half, finely chop the spring onion and parsley
- In a small bowl combine the lemon juice, olive oil and salt and pepper and mix
- Combine all ingredients in a serving bowl, pour over the dressing and serve
