Ingredients:

  • Thyme - 5 g (1 tbsp)
  • Salt and pepper - 0.3 g (1 pinch)
  • Red pepper - 240 g
  • Cod fillet - 160 g
  • Pesto sauce - 24 g (1 tbsp)
  • Brown rice - 100 g

How to make:

  1. Cook the rice in twice the volume of salted water for 25 minutes, or until cooked
  2. De-seed the red pepper and cut into quarters
  3. Heat the grill to medium-high temperature. Place the cod and red peppers on a baking tray and grill for 15 minutes, or until the fish is cooked and the pepper is browned
  4. Finely chop the thyme and stir it through the rice. Drizzle over a little olive oil
  5. Serve the cod with red pepper, brown rice, and a spoon of pesto
