Ingredients:
- Olive oil - 15 ml (1 tbsp)
 - Soy sauce - 15 ml (1 tbsp)
 - Sweet potato - 190 g
 - Apple cider vinegar - 15 ml (1 tbsp)
 - Tofu - 200 g
 - Asparagus - 150 g
 - Salt and black pepper - 0.3 g (1 pinch)
 
How to make:
- Pat the tofu dry with a paper towel. Then mix together the marinade ingredients in a small bowl
 - Slice the tofu into strips and place on a plate and pour over the marinade and leave for 30 minutes, or longer if possible
 - Preheat the oven to 425. Place the sweet potato on a baking tray and prick with a fork
 - Bake until tender, it will take approximately 45 minutes depending on the size of the potato
 - Pre-heat your grill to medium-high and place the tofu and asparagus under the grill. Grill for 8-10 minutes each side
 - Serve the tofu with the sweet potato and asparagus, drizzled with olive oil
