Grilled Tofu and Asparagus Served with Baked Sweet Potato

Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Soy sauce - 15 ml (1 tbsp)
  • Sweet potato - 190 g
  • Apple cider vinegar - 15 ml (1 tbsp)
  • Tofu - 200 g
  • Asparagus - 150 g
  • Salt and black pepper - 0.3 g (1 pinch)

How to make:

  1. Pat the tofu dry with a paper towel. Then mix together the marinade ingredients in a small bowl
  2. Slice the tofu into strips and place on a plate and pour over the marinade and leave for 30 minutes, or longer if possible
  3. Preheat the oven to 425. Place the sweet potato on a baking tray and prick with a fork
  4. Bake until tender, it will take approximately 45 minutes depending on the size of the potato
  5. Pre-heat your grill to medium-high and place the tofu and asparagus under the grill. Grill for 8-10 minutes each side
  6. Serve the tofu with the sweet potato and asparagus, drizzled with olive oil
