Ingredients:
- Olive oil - 10 ml (2 tsp)
- Olives - 20 g
- Lemon juice - 15 ml (1 tbsp)
- Sweet potato - 100 g
- Cod - 60 g
- Carrot - 50 g
- Bell pepper - 100 g
- Lemon zest - 5 g (0.5 tsp)
- Greens - 50 g
- Mixed nuts - 10 g
How to make:
- Cut the carrots, bell peppers, sweet potatoes into large cubes, sprinkle with olive oil and bake the vegetables for 30 minutes at 350°F
- In another dish, bake the fish for 20 minutes
- Put the vegetables in a deep dish, top with boneless fish, herbs and olives
- Drizzle with oil and lemon juice, season with lemon zest if desired
- Sprinkle with pine nuts
