Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Asparagus, spear - 420 g (26 pcs)
- Edamame bean - 120 g (1 cup)
- Artichoke heart, canned - 190 g
- Red onion, small - 120 g (1 whole)
How to make:
- Trim the asparagus and cut each spear in half
- Peel and slice the red onion
- Roast the onion, asparagus and artichokes with a little olive oil and a pinch of salt for approximately 10 minutes
- Heat the edamame beans in the microwave or in a pan of water
- Combine and serve with a drizzle of olive oil, salt and pepper
