Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Asparagus, spear - 420 g (26 pcs)
  • Edamame bean - 120 g (1 cup)
  • Artichoke heart, canned - 190 g
  • Red onion, small - 120 g (1 whole)

How to make:

  1. Trim the asparagus and cut each spear in half
  2. Peel and slice the red onion
  3. Roast the onion, asparagus and artichokes with a little olive oil and a pinch of salt for approximately 10 minutes
  4. Heat the edamame beans in the microwave or in a pan of water
  5. Combine and serve with a drizzle of olive oil, salt and pepper
