Ingredients:
- Olive oil - 5 ml (1 tsp)
- Cherry tomato - 50 g (3 pcs)
- Lemon juice - 30 ml (2 tbsp)
- Quinoa, dry - 100 g (0.6 cup)
- Sweet potato - 150 g
- Tofu - 50 g
- Lettuce - 50 g
- Cashew nut - 5 g
- Sunflower sprouts - 5 g (0.5 tbsp)
How to make:
- Boil quinoa until tender
- Cut sweet potato into 1 cm-thick slices. Fry in a grill pan or bake in the oven with olive oil
- Put lettuce leaves on a plate. Add cooked quinoa on top, followed by a layer of tomatoes (cut in half) and sunflower sprouts
- Mix olive oil and lemon juice
- Add chopped tofu and cashews on top
