Ingredients:
- Olive oil - 45 ml (3 tbsp)
- Zucchini - 240 g
- Lemon juice - 25 ml (1.5 tbsp)
- Tomato - 130 g (1 whole)
- Green bell pepper - 80 g (0.5 whole)
- Green salad - 300 g
- Red bell pepper - 80 g (0.5 whole)
- Tofu, marinated - 410 g
How to make:
- Prepare the vegetables into large chunks and cut the tofu into large cubes
- Put the vegetables and tofu onto skewers and cook under a medium heat grill for 8 to 10 minutes, turn and cook again for 8 to 10 minutes
- Prepare the dressing by mixing the olive oil and lemon juice with a pinch of salt and pepper
- Dress the salad and serve with the cooked tofu and vegetable skewers
