Ingredients:

  • Olive oil - 45 ml (3 tbsp)
  • Zucchini - 240 g
  • Lemon juice - 25 ml (1.5 tbsp)
  • Tomato - 130 g (1 whole)
  • Green bell pepper - 80 g (0.5 whole)
  • Green salad - 300 g
  • Red bell pepper - 80 g (0.5 whole)
  • Tofu, marinated - 410 g

How to make:

  1. Prepare the vegetables into large chunks and cut the tofu into large cubes
  2. Put the vegetables and tofu onto skewers and cook under a medium heat grill for 8 to 10 minutes, turn and cook again for 8 to 10 minutes
  3. Prepare the dressing by mixing the olive oil and lemon juice with a pinch of salt and pepper
  4. Dress the salad and serve with the cooked tofu and vegetable skewers
