Ingredients:
- Parsley - 5 g
- Olive oil - 25 ml (1.5 tbsp)
- Cherry tomato - 50 g
- Onion - 30 g
- Tofu, firm - 200 g
- Salt and pepper - 0.3 g (1 pinch)
- Parmesan cheese - 40 g
- Paprika - 0.3 g (1 pinch)
How to make:
- Heat the oil in a frying pan over a medium heat and gently fry the onion until golden brown and sticky
- Roughly mash the tofu in a bowl using a fork, keeping some pieces chunky. Add to the pan and fry for 3 mins. Season with spices
- Raise the heat, then tip in the tomatoes, cooking for 5 mins more or until they begin to soften
- Sprinkle with parsley and parmesan before serving
