Turkey Burgers with Green Beans and Vegan Pesto

Ingredients:

  • Olive oil - 10 ml (2 tsp)
  • Salt and pepper - 0.6 g (2 pinch)
  • Green beans - 200 g
  • Sage - 5 g (1 tsp)
  • Pumpkin seeds - 7.5 g (1 tbsp)
  • Turkey mince - 140 g
  • Garlic clove, minced - 2 g
  • Onion, finely chopped - 30 g
  • Vegan pesto - 30 g (1 tbsp)

How to make:

  1. Preheat the oven to 180C. Line a baking tray with greaseproof paper
  2. Place oil in a saucepan and cook the onion and garlic over a low heat until softened
  3. Place the turkey mince into a large bowl and mix with the chopped herbs, salt and pepper and the onion mixture. Then shap into 1 large or 2 small burgers
  4. Place the burgers into the oven and cook for 25 minutes or until browned on top and cooked through
  5. While the burgers are cooking, trim the green beans and blanch in boiling salted water
  6. Serve the green beans with pumpkin seeds over, with the turkey burgers and some vegan pesto
