Ingredients:
- Egg - 150 g (3 pcs)
- Spinach - 30 g (1 cup)
- Olive oil - 2 ml (0.5 tsp)
- Whole-wheat bread - 60 g (2 slice)
- Apple - 200 g
- Bell pepper, sliced - 50 g (0.5 cup)
- Cherry tomato, chopped - 90 g (0.5 cup)
How to make:
- In a medium pan, heat olive oil on medium heat. Once warm, add red bell pepper and tomatoes and cook for 5 minutes. Then add spinach and cook until wilted
- In a sperate bowl, whisk egg with salt and pepper. Pour over veggies and cook, flipping and scrambling throughout, until the egg is cooked through
- Serve on toast
- Eat apple as a snack
