Ingredients:

  • Egg - 150 g (3 pcs)
  • Spinach - 30 g (1 cup)
  • Olive oil - 2 ml (0.5 tsp)
  • Whole-wheat bread - 60 g (2 slice)
  • Apple - 200 g
  • Bell pepper, sliced - 50 g (0.5 cup)
  • Cherry tomato, chopped - 90 g (0.5 cup)

How to make:

  1. In a medium pan, heat olive oil on medium heat. Once warm, add red bell pepper and tomatoes and cook for 5 minutes. Then add spinach and cook until wilted
  2. In a sperate bowl, whisk egg with salt and pepper. Pour over veggies and cook, flipping and scrambling throughout, until the egg is cooked through
  3. Serve on toast
  4. Eat apple as a snack
