Ingredients:

  • Eggplant - 100 g
  • Lemon juice - 15 ml (1 tbsp)
  • Tomato - 50 g (0.5 whole)
  • Apricot, dried - 32 g (4 pcs)
  • Pumpkin seeds - 20 g (2 tbsp)
  • Mixed green salad - 100 g (4 cup)
  • Gouda cheese - 50 g
  • Tuna, canned in own juice - 90 g

How to make:

  1. Slice the eggplant to thin pieces, cook it on the grill or pan
  2. Put greens on the cooked eggplant, put tuna on top of everything and sprinkle with seeds. Drizzle with lemon juice
  3. Cheese and dried fruit: Slice the apricots and place on a dessert plate with the cheese
