Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Sunflower seeds - 10 g (1 tbsp)
- Apple cider vinegar - 10 ml (2 tsp)
- Avocado - 210 g (1.5 whole)
- Green beans - 120 g
- Rocket - 40 g (2 cup)
- Low carb bread - 40 g
How to make:
- Steam the green beans until tender. Mash the avocado with a fork
- Toast the bread, then spread with the avocado, add a drizzle of olive oil and some freshly ground black pepper and salt
- Mix the olive oil and apple cider vinegar together and pour over the rocket leaves
- Sprinkle the salad and avocado toast with sunflower seeds and serve with green beans
