Ingredients:
- Olive oil - 5 ml (1 tsp)
- Onion - 30 g (0.5 whole)
- Potato - 100 g (1 whole)
- Cod - 250 g (1 pcs)
- Green beans - 100 g (0.8 cup)
- Greens - 20 g (4 tbsp)
How to make:
- Preheat oven to 425°F (220°C). Coat sheet pan (or casserole) with olive oil or nonstick cooking spray
- Place the sliced vegetables on the sheet pan in a thin layer so that they cook quickly. Drizzle with olive oil, salt, and pepper to taste, turning to coat the veggies
- Lay the fish filet on top of the veggies, drizzle with olive oil and lemon juice. Top with chopped greens. Season with salt and pepper
- Bake for 20-25 minutes, until the veggies are tender and fish flakes easily with a fork
