Ingredients:

  • Olive oil - 5 ml (1 tsp)
  • Onion - 30 g (0.5 whole)
  • Potato - 100 g (1 whole)
  • Cod - 250 g (1 pcs)
  • Green beans - 100 g (0.8 cup)
  • Greens - 20 g (4 tbsp)

How to make:

  1. Preheat oven to 425°F (220°C). Coat sheet pan (or casserole) with olive oil or nonstick cooking spray
  2. Place the sliced vegetables on the sheet pan in a thin layer so that they cook quickly. Drizzle with olive oil, salt, and pepper to taste, turning to coat the veggies
  3. Lay the fish filet on top of the veggies, drizzle with olive oil and lemon juice. Top with chopped greens. Season with salt and pepper
  4. Bake for 20-25 minutes, until the veggies are tender and fish flakes easily with a fork
