Ingredients:
- Spinach - 20 g (1 cup)
- Olive oil - 5 ml (1 tsp)
- Lemon juice - 5 ml (1 tsp)
- Salt and pepper - 0.3 g (1 pinch)
- Cucumber - 50 g (0.5 whole)
- Tofu - 200 g
- Avocado - 25 g
- Radish - 50 g
- Peas - 150 g (1 cup)
How to make:
- Preheat the oven to 350-400 °F. Marinate tofu: coat with salt, pepper, and herbs. Spread on a baking sheet, bake for 10 minutes and put on a plate
- Steam green peas or put in boiling water for 5-7 minutes. Transfer to a blender, add avocado and greens. Blend until the consistency of mashed potatoes is reached, then add to the tofu
- Shred cucumber, radish, add 8-10 leaves of spinach and greens. Season with lemon juice and drizzle with oil
