Ingredients:

  • Spinach - 20 g (1 cup)
  • Olive oil - 5 ml (1 tsp)
  • Lemon juice - 5 ml (1 tsp)
  • Salt and pepper - 0.3 g (1 pinch)
  • Cucumber - 50 g (0.5 whole)
  • Tofu - 200 g
  • Avocado - 25 g
  • Radish - 50 g
  • Peas - 150 g (1 cup)

How to make:

  1. Preheat the oven to 350-400 °F. Marinate tofu: coat with salt, pepper, and herbs. Spread on a baking sheet, bake for 10 minutes and put on a plate
  2. Steam green peas or put in boiling water for 5-7 minutes. Transfer to a blender, add avocado and greens. Blend until the consistency of mashed potatoes is reached, then add to the tofu
  3. Shred cucumber, radish, add 8-10 leaves of spinach and greens. Season with lemon juice and drizzle with oil
