Ingredients:
- Red onion - 30 g (0.25 whole)
- Olive oil - 20 ml (1.5 tbsp)
- Lemon juice - 15 g (1 tbsp)
- Garlic clove - 2 g (0.5 whole)
- Cucumber - 150 g
- Tomato - 130 g (1 whole)
- New potato - 110 g
- Parsley, finely chopped - 5 g (1 tbsp)
- Tuna - 150 g
- Chickpeas - 150 g
- Salt and black pepper - 0.3 g (1 pinch)
How to make:
- Boil the new potatoes in salted water for 15 minutes, or until cooked. Cut into uniform pieces. Whisk together dressing ingredients in jug or jar
- Mix together all of the salad ingredients in a large bowl. Toss with dressing
- Season with pepper and extra salt if desired
