Ingredients:
- Olive oil - 5 ml (1 tsp)
- Whole-wheat bread - 100 g
- Olives - 80 g
- Lemon juice - 15 ml (1 tbsp)
- Arugula - 10 g (0.5 cup)
- Chickpeas, canned - 100 g
- Parsley, chopped - 5 g (1 tbsp)
- Salt and black pepper - 0.3 g (1 pinch)
How to make:
- In a small bowl, mix chickpeas, chopped olives, arugula and parsley and lemon juice. Season with salt and pepper
- Slightly mash the mass using a fork or blend in a blender
- Add olive oil, mix well, spread the mixture on a slice of bread and serve
