Ingredients:
- Olive oil - 5 ml (1 tsp)
- Carrot - 50 g (0.5 whole)
- Sesame seeds - 20 g (2 tbsp)
- Bell pepper - 50 g (0.25 whole)
- Cauliflower - 100 g
- Greens - 15 g (0.5 cup)
- Couscous - 60 g (0.4 cup)
- Green peas - 150 g (1 cup)
How to make:
- Pour boiling water over couscous, cover with a lid and leave for 5-10 mins until the couscous is soft
- Steam green peas or boil for 5-7 minutes
- Cut raw cauliflower, bell pepper, and carrot. Season with spices to taste and stew in a pan until al dente, about 3-5 minutes
- Season with lemon juice, sprinkle with greens and sesame seeds when serving
