Ingredients:

  • Olive oil - 5 ml (1 tsp)
  • Carrot - 50 g (0.5 whole)
  • Sesame seeds - 20 g (2 tbsp)
  • Bell pepper - 50 g (0.25 whole)
  • Cauliflower - 100 g
  • Greens - 15 g (0.5 cup)
  • Couscous - 60 g (0.4 cup)
  • Green peas - 150 g (1 cup)

How to make:

  1. Pour boiling water over couscous, cover with a lid and leave for 5-10 mins until the couscous is soft
  2. Steam green peas or boil for 5-7 minutes
  3. Cut raw cauliflower, bell pepper, and carrot. Season with spices to taste and stew in a pan until al dente, about 3-5 minutes
  4. Season with lemon juice, sprinkle with greens and sesame seeds when serving
