Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Balsamic vinegar - 10 ml (2 tsp)
- Salt and pepper - 0.3 g (1 pinch)
- Kalamata olive - 35 g (12 pcs)
- Tomato, chopped - 140 g (1 cup)
- Feta cheese - 40 g (0.3 cup)
- Chicken breast, grilled - 145 g
- Mixed salad leaves - 100 g (2 cup)
- Cucumber, chopped - 135 g (1 cup)
- Pitta bread, toasted - 70 g
How to make:
- Grill chicken to internal temp of 165 F, then slice into strips and set aside
- Mix the dressing ingredients, olive oil, balsamic vinegar, salt and pepper
- In bowl, place the lettuce, tomatoes, cucumbers, feta cheese, and olives. Mix together. Top with sliced chicken and drizzle over the dressing
- Serve with toasted pitta bread
