Ingredients:
- Parsley - 5 g (1 tbsp)
- Olive oil - 5 ml (1 tsp)
- Lemon juice - 30 ml (2 tbsp)
- Brown rice, cooked - 160 g
- Chicken fillet - 160 g
- Asparagus - 160 g
How to make:
- Trim the asparagus and blanch in salted water for 2 minutes
- Cook the rice with double the volume of water and a pinch of salt according to the packet instructions
- Place the chicken fillet on a baking tray, add a pinch of salt and pepper and grill under a medium heat for approximately 10 minutes. Turn the chicken over and add the asparagus grill for a further 10-15 minutes, or until the chicken is cooked through
- When the rice is cooked, add the chopped parsley and stir to combine
- Serve the asparagus, brown rice and chicken with a squeeze of lemon juice, a drizzle of olive oil and a ganish of fresh chopped parsley
