Ingredients:

  • Parsley - 5 g (1 tbsp)
  • Olive oil - 5 ml (1 tsp)
  • Lemon juice - 30 ml (2 tbsp)
  • Brown rice, cooked - 160 g
  • Chicken fillet - 160 g
  • Asparagus - 160 g

How to make:

  1. Trim the asparagus and blanch in salted water for 2 minutes
  2. Cook the rice with double the volume of water and a pinch of salt according to the packet instructions
  3. Place the chicken fillet on a baking tray, add a pinch of salt and pepper and grill under a medium heat for approximately 10 minutes. Turn the chicken over and add the asparagus grill for a further 10-15 minutes, or until the chicken is cooked through
  4. When the rice is cooked, add the chopped parsley and stir to combine
  5. Serve the asparagus, brown rice and chicken with a squeeze of lemon juice, a drizzle of olive oil and a ganish of fresh chopped parsley
