Ingredients:

  • Thyme - 5 g (1 tbsp)
  • Red pepper - 160 g (1 whole)
  • Brown rice, cooked - 170 g
  • Cod fillet - 160 g
  • Salt and black pepper - 0.3 g (1 pinch)
  • Vegan pesto - 24 g (1 tbsp)

How to make:

  1. Cook the rice in two parts water for 25 minutes
  2. Prepare the red pepper, deseed and cut into quarters
  3. Heat the grill to medium-high temperature. Place the cod and red peppers on a baking tray and grill for 15 minutes, or until the fish is cooked and the pepper is browned
  4. Finely chop the thyme and stir it through the rice
  5. Serve the cod with red pepper, brown rice, and a spoon of pesto
