Ingredients:

  • Zucchini - 480 g
  • Coconut oil - 15 ml (1 tbsp)
  • Mushroom - 210 g (3 cup)
  • Sesame seeds - 10 g (1 tbsp)
  • Green bell pepper - 160 g (1 whole)
  • Cashew nut - 48 g
  • Red bell pepper - 160 g (1 whole)

How to make:

  1. Trim, de-seed and slice the peppers, chop the courgettes into chunks and slice the mushrooms in half
  2. Put all vegetables on a baking sheet and rub in the coconut oil
  3. Roast in a 180 degree oven for 8 minutes, then turn the vegetables and sprinkle over the sesame seeds and roast for another 8-10 minutes
  4. Roughly chop the cashew nuts and scatter them over the vegetables and serve
