Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Lemon juice - 15 ml (1 tbsp)
  • Parsley, chopped - 10 g (2 tbsp)
  • Chicory - 700 g
  • Tofu, smoked - 500 g
  • Red onion, small - 85 g (0.7 whole)

How to make:

  1. Trim the chicory at the base and then slice in quarters and separate the leaves into a bowl
  2. Slice the red onion and mix in with the chicory
  3. Finely chop the parsley and add to the salad
  4. Slice the tofu and arrange on a plate
  5. In a separate bowl mix the olive oil and lemon juice with a little sea salt and freshly ground black pepper
  6. Pour the dressing over the salad and serve with the smoked tofu
