Ingredients:
- Olive oil - 5 ml (1 tsp)
- Onion - 30 g (0.5 whole)
- Garlic clove - 6 g (2 pcs)
- Oregano - 0.3 g (1 pinch)
- Salt and pepper - 0.3 g (1 pinch)
- Cilantro - 5 g (1 tbsp)
- Tomato - 50 g (0.5 whole)
- Sweet potato - 300 g (2 whole)
- Apple cider vinegar - 5 ml (1 tsp)
- Cumin - 0.3 g (1 pinch)
- Chicken breast mince - 150 g (1.2 cup)
How to make:
- Pierce the sweet potato several times with a fork and cook it in microwave for about 10 minutes until soft
- Grind onion, tomato, garlic, vinegar, and spices in a blender
- Put vegetables in a pan and simmer for 2-3 minutes under a cover. Add minced meat and cook for 4-5 minutes
- Cut the sweet potato in half, scrape some warm pulp, add it to the minced meat, and mix
- Lay out halves of sweet potato servings and add the mixture of minced meat and potato pulp
- Sprinkle some herbs on top before serving
