  • Parsley - 5 g
  • Olive oil - 25 ml (1.5 tbsp)
  • Cherry tomato - 50 g
  • Onion - 30 g
  • Tofu, firm - 200 g
  • Salt and pepper - 0.3 g (1 pinch)
  • Parmesan cheese - 40 g
  • Paprika - 0.3 g (1 pinch)

How to make:

  1. Heat the oil in a frying pan over a medium heat and gently fry the onion until golden brown and sticky
  2. Roughly mash the tofu in a bowl using a fork, keeping some pieces chunky. Add to the pan and fry for 3 mins. Season with spices
  3. Raise the heat, then tip in the tomatoes, cooking for 5 mins more or until they begin to soften
  4. Sprinkle with parsley and parmesan before serving
