Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Lemon juice - 15 ml (1 tbsp)
  • Salt and pepper - 0.3 g (1 pinch)
  • Dijon mustard - 2.5 g (0.5 tsp)
  • Sunflower seeds - 16 g (2 tbsp)
  • Avocado - 105 g (0.75 whole)
  • Bacon - 75 g
  • Baby spinach - 50 g

How to make:

  1. Grill the bacon, or fry it in a skillet for approximately 7 minutes or until cooked
  2. Peel the avocado and slice. In a small bowl combine the dressing ingredients and whisk until well combined and smooth
  3. Roughly chop the spinach and scatter over a plate and drizzle over the dressing. Top with the avocado, bacon and sunflower seeds and serve
