Ingredients:
- Olive oil - 45 ml (3 tbsp)
- Parsley, chopped - 10 g (2 tbsp)
- Red pepper - 100 g (0.5 whole)
- Sesame seeds - 20 g (2 tbsp)
- Apple cider vinegar - 15 ml (1 tbsp)
- Black olive - 15 g (2 tbsp)
- Rocket - 30 g (1 cup)
- Celery stick - 40 g (2 pcs)
- Cauliflower rice - 500 g (5 cup)
How to make:
- Whizz the cauliflower in a food processor until it resembles rice
- Place the rice in a large bowl with the olives, chopped red pepper and celery sticks, sesame seeds and finely chopped parsley and rocket
- Mix to combine. In a separate bowl prepare the dressing with olive oil and apple cider vinegar
- Combine with the cauliflower mixture
