Ingredients:

  • Olive oil - 45 ml (3 tbsp)
  • Parsley, chopped - 10 g (2 tbsp)
  • Red pepper - 100 g (0.5 whole)
  • Sesame seeds - 20 g (2 tbsp)
  • Apple cider vinegar - 15 ml (1 tbsp)
  • Black olive - 15 g (2 tbsp)
  • Rocket - 30 g (1 cup)
  • Celery stick - 40 g (2 pcs)
  • Cauliflower rice - 500 g (5 cup)

How to make:

  1. Whizz the cauliflower in a food processor until it resembles rice
  2. Place the rice in a large bowl with the olives, chopped red pepper and celery sticks, sesame seeds and finely chopped parsley and rocket
  3. Mix to combine. In a separate bowl prepare the dressing with olive oil and apple cider vinegar
  4. Combine with the cauliflower mixture
