Ingredients:
- Olive oil - 10 ml (2 tsp)
- Zucchini - 100 g
- Lemon juice - 5 ml (1 tsp)
- Chickpeas, canned - 130 g
- Salt and pepper - 0.3 g (1 pinch)
- Tomato - 50 g
- Bell pepper - 50 g
- Broccoli - 100 g
- Greens - 20 g
How to make:
- Tomatoes, peppers and zucchini or other vegetables cut into large chunks
- Disassemble the broccoli into inflorescences. In a deep skillet, preheat the oil, simmer the chopped vegetables for 5 minutes (except tomatoes)
- Add the chickpeas and tomatoes, simmer for another 5 minutes. Add the chopped herbs, simmer for a couple more minutes. Add salt and pepper to taste
- When serving, sprinkle with lemon juice
