Ingredients:

  • Olive oil - 10 ml (2 tsp)
  • Zucchini - 100 g
  • Lemon juice - 5 ml (1 tsp)
  • Chickpeas, canned - 130 g
  • Salt and pepper - 0.3 g (1 pinch)
  • Tomato - 50 g
  • Bell pepper - 50 g
  • Broccoli - 100 g
  • Greens - 20 g

How to make:

  1. Tomatoes, peppers and zucchini or other vegetables cut into large chunks
  2. Disassemble the broccoli into inflorescences. In a deep skillet, preheat the oil, simmer the chopped vegetables for 5 minutes (except tomatoes)
  3. Add the chickpeas and tomatoes, simmer for another 5 minutes. Add the chopped herbs, simmer for a couple more minutes. Add salt and pepper to taste
  4. When serving, sprinkle with lemon juice
