Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Zucchini - 240 g
- Olives - 30 g
- Lemon juice - 10 ml (2 tsp)
- Onion - 15 g
- Edamame bean - 140 g
- Red bell pepper - 240 g (1.5 whole)
How to make:
- Boil the edamame beans in some water for 2 minutes to defrost, then put aside to cool
- De-seed the pepper and slice, peel and slice finely the onion and slice the courgette
- Put all vegetables with the edamame beans and olives into a bowl and mix to combine
- In a separate bowl mix the olive oil with lemon juice and a pinch of sea salt and some freshly ground black pepper. Drizzle the dressing over the salad and serve
