Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Zucchini - 240 g
  • Olives - 30 g
  • Lemon juice - 10 ml (2 tsp)
  • Onion - 15 g
  • Edamame bean - 140 g
  • Red bell pepper - 240 g (1.5 whole)

How to make:

  1. Boil the edamame beans in some water for 2 minutes to defrost, then put aside to cool
  2. De-seed the pepper and slice, peel and slice finely the onion and slice the courgette
  3. Put all vegetables with the edamame beans and olives into a bowl and mix to combine
  4. In a separate bowl mix the olive oil with lemon juice and a pinch of sea salt and some freshly ground black pepper. Drizzle the dressing over the salad and serve
