Ingredients:

  • Olive oil - 70 ml (5 tbsp)
  • Cherry tomato - 210 g (1.5 cup)
  • Lemon juice - 15 ml (1 tbsp)
  • Parsley, chopped - 20 g (0.5 cup)
  • Cauliflower - 500 g
  • Rocket - 75 g (3 cup)
  • Spring onion - 30 g (3 pcs)
  • Green olive, pitted - 90 g

How to make:

  1. Remove the florets from the cauliflower and grate them roughy into a bowl
  2. Cut the cherry tomatoes in half, roughly chop the rocket, parsley and spring onions and put in the bowl with the cauliflower and green olives
  3. Mix the olive oil, lemon juice and a pinch of salt and pepper and pour the dressing over the salad
