Ingredients:

  • Coconut oil - 22 ml (1.5 tbsp)
  • Salt and pepper - 0.3 g (1 pinch)
  • Cauliflower - 250 g
  • Garam masala - 5 g (1 tsp)
  • Pumpkin seeds - 10 g (1 tbsp)
  • Turkey fillet - 140 g
  • Curly kale, sliced - 130 g (2 cup)

How to make:

  1. Slice the cauliflower into 1 1/2 inch thick steaks
  2. Crush the pumpkin seeds and combine with garam masala, coconut oil and salt and pepper. Coat the cauliflower steaks with the seed mixture
  3. Place the steaks on a baking tray next to the turkey strips, drizzle a little water over the tray and roast in a 180 degree oven for 10 minutes, then flip over and roast for a further 10 mintues or until tender
  4. Steam the curly kale. Serve and enjoy
